Do these brownies look gooey enough to you?
They did to me too…
…at 8:30 this morning.
What, you don’t eat brownies for breakfast? Yeah, me neither. I actually eat a wonderfully healthy breakfast every morning; think yogurt, oatmeal, fruit and peanut butter in some combination or another. It is actually my favorite meal and I’m always a little sad when it’s over.
But back to the brownies. I made this evil baked good last night (sorry, I’m not usually that mean to my desserts). I woke up this morning ready to cut and photograph them to find out that about 75% of my work was underbaked….. uhoh.
I started cutting the brownies and found that the fudgey inside was getting stuck on the side of the knife. So I did what any normal person would do, I tasted them.
And then I tasted them again.
And then a taste turned into a slice and into another slice…. and before you know it more brownies than I care to admit had disappeared. Not my finest moment. But hey, at least I can vouch for the recipe!

Peanut Butter Caramel “Baked Brownies”
Serving Size: 36
Ingredients
- 1 1/4 cups all-purpose flour
- 2 tablespoons dark unsweetened cocoa powder (use a good one like Valhrona)
- 1 teaspoon salt
- 11 ounces bittersweet chocolate chips or dark chocolate coarsly chopped (I used 60% cocoa)
- 1 cup, 2 sticks, unsalted butter cut into slices
- 1 teaspoon instant espresso powder
- 1 1/2 cups granulated sugar
- 1/2 cup packed light brown sugar
- 5 large eggs at room temperature
- 2 1/2 teaspoons vanilla, separated
- 1 7-ounce bag caramel candies
- 3 tablespoons creamy salted peanut butter
Cooking Directions
Pre-heat oven to 350 degrees
Grease a 13×9 pan lined with foil; set aside
Whisk together flour, cocoa and salt in a medium bowl; set aside
Place large heat-proof bowl over a pot of simmering water; in that bowl combine chocolate, butter and espresso powder
Stir mixture until completely melted and turn off burner
Leaving the bowl over the pot of water, whisk in sugars
Move bowl to counter and once at room temperature, whisk in 3 eggs
Whisk in remaining eggs and 2 treaspoons of vanilla, do not overbeat
Gently fold in flour mixture until just combined
Pour brownie batter into prepared pan and set aside
In a microwave-proof bowl, combine caramels, peanut butter and 1/2 teaspoon vanilla
Microwave for 1 minute and stir; microwave for additional 30-second increments until melted, stirring in-between
Drop spoonfulls of caramel mixture over brownie batter
Use a knife to swirl caramel through brownies; Don’t worry about it looking pretty, the caramel will sink into the brownie and that is ok
Bake for 30-35 minutes or until a knife comes out clean being careful not to overbake

I baked the brownies for 25 minutes but I think 30-35 minutes would result in a perfectly baked brownie

I always eat dessert for breakfast after a big holiday dinner. I have the leftover cake from the previous night! My favorite is when I have 7-layer cake every morning during Passover!

I love gooey and under baked brownies! They aren’t always the prettiest but they can be the tastiest!
I recently had an obscenely large piece of leftover birthday cake for breakfast with a tall glass of milk. Best breakfast ever! I think the gooey under baked brownies sound incredible.

yeah that’s why I don’t make brownies. I’d go all Miranda from Sex & the City and eat them out of the trashcan. Bad news all around.

I’ve made undercooked brownies only once. My son was going through a rough patch when he was about 14. Couldn’t be civil to anyone. So I made brownies and undercooked them and squooshed them together with candy corn and walnuts and shaped them into a log and then shaped the log into a round swirly shape and put them on the center of the cake I’d made for dessert.
Then I piped “DON’T BE A” above it.
He laughed and it started him on the road to recovery to being a human being.
That is hysterical!

Whatever, they have peanut butter in them. Reasonable breakfast food. They’re probably more nutritious than a doughnut, which is somehow considered acceptable for breakfast on a regular basis.
Of course I eat brownies for breakfast sometimes. Life wouldn’t be worth living if I didn’t.

In my opinion, the gooier the better when it comes to brownies! So these seem kind of perfectly baked to me. And seriously. Peanut butter caramel. I’m in love.
I rarely have baked goods for breakfast. But lunch and dinner are a whole other story.
I love the gooeyness dripping out. They look heavenly. I have been meaning to get that cookbook. I think it is a given now but I will try this recipe out to hold me over. Yummy!

I try to stay away from dessert for breakfast, but that’s not to say I’m always successful, either! The only problem is that I end up thinking I deserve to eat dessert later in the day, too!
I had that problem with the cookie dough ice cream bar in my freezer!
Wow I love super gooey brownies. IDK how you didn’t eat the entire pan! Oh and if it makes you feel any better, I had a red velvet whoopie pie for breakfast… but I too typically have a healthy breakfast.

I’m not usually a dessert for breakfast person, except one time a year – when my family is in Aruba, we eat Dunkin’ Donuts donuts every morning…its such a special treat on vacation :)

I will admit, I do occasionally splurge and have dessert for breakfast… but only sometimes! These brownies look fabulous, especially cause they’re so gooey and moist. I personally can’t stand a dry brownie :p

I’ve definitely been in the EXACT same position with preparing brownies to photograph and not being able to resist, despite the early morning hour. These sound deadly. I love myself an ooey gooey brownie.
Oh, I know how that goes! It’s nearly impossible to resist the sweet treat I’m photographing, no matter what time of day. I’ve eaten my fair share of brownies & cookies for breakfast because of it. Ain’t nothin’ wrong with underbaked brownies. Kinda like have a brownie and brownie batter at the same time! mmmm

OMGosh peanut butter, chocolate, AND caramel?! These look amazing. I made awesome fudgey brownies the other day but they were so gooey, they didn’t photograph well at all. I would definitely eat these for breakfast :)
I think it would be a crime not to eat at least 3 of these for breakfast, and hey… at least you have the whole day to worry about burning of those things called “calories”
I actually tend to prefer eating desserts earlier than later -these look perfect for any time of day!
I had to giggle when I read the instruction about it being okay for the PB caramel sinking into the brownie. Heck, that’s better than okay- it’s preferable! And I’m forever underbaking things because I like ’em gooey.

These look so great! I am drooling! I love a gooey center. I have to say, you must have some incredible willpower to make these last night and not even cut into them until this morning. After the smell from the oven, I don’t think I could have gone to bed without a bite, or two or three. ha ha. I started a low-calorie plan on Monday, so I will just have to keep drooling for now. Maybe I will make them for my family and me for the holidays.
Oops. I just realized this recipe was actually posted back in June. My bad. I just found your blog yesterday and look forward to visiting it periodically for good dessert ideas.
