Whole Wheat Honey & Goat Cheese Drop Biscuits

Growing up, we didn’t eat a lot of fast food, but I do remember a few occasions when my dad would pick up KFC on his way home from work.  The thing is, I don’t remember anything about those meals except for the biscuits.  Buttery, flakey and light… they were so good.

It has been a long time since I had one of those biscuits.  I only eat fast food in acts of road-trip desperation, and even then my selections are limited to the standard but gross grilled chicken sandwich/salad options.  Blech.

And beyond that, biscuits have made very few appearances in my life.  Usually I save my butter-laden indulgences for cookies, cake, ice cream, etc.  Biscuits just take a backseat to my sweet tooth.  So when this week’s recipe selection for the Joy the Baker Cookbook Spotlight and Cook-Off included these whole wheat biscuits, I jumped at the chance to relive my childhood food memories in a slightly healthier and more grown-up way. Win.

    I didn’t even know KFC has biscuits! hehe. I recently ate some biscuits at Sweet Cheeks (a BBQ place here in Boston) and I fell in love with them. Still haven’t made biscuits myself yet though! These look delicious.

    You had me at goat cheese and honey! I am making some bruschetta tonight with these ingredients as I love the sweet and salty flavors. These biscuits…wow. Just wow. I think they’re my favorite new biscuit and I haven’t even tried them yet!

    This is like me and Popeyes! I used to go there with my grandparents every now and then and the thing I remember most are the biscuits. Great recipe!!

    Yummy! Healthy with the whole wheat. Delicious with the honey and goat cheese. I always loved the mash potatoes from KFC. Now I cannot even drive by it without cringing.

    I feel the same way about the biscuits from Popeyes! These look so delicious and healthy to boot. But it’s really the honey that wins me over.

    I love biscuits! These look amazing! I have the same memories of KFC as a kid. My Dad hated it, but every once in awhile we would get it, and all I remember is the biscuits!

    I’m not gonna lie…the biscuits were my favorite thing at KFC when I was little, too. Well, those and the mashed potatoes & gravy. Ugh. Anyway, these are definitely a more grown-up biscuit! Yours look like they turned out good :)

    For me it was the biscuits at Popeye’s. Thought I’m pretty sure that they have some ingredient in them that I can’t eat now that I’m veg. But they were seriously good.

    I’m pretty sure I’d like these better…whole wheat AND they have goat cheese? Win/win.

    I thought these biscuits were easy to make and very delicious. I even made little sandwiches out of them the next day. Honey is the perfect topping when they are fresh out of the oven.

    Glad you liked them–your enthusiasm really comes through! I was surprised by the texture since they are made with wheat flour. usually when I bake with wheat four, what I’m making ends up heavy and dense.
